Ratatouille hotpot
Here is a classic French vegetarian casserole. Heat 1 tbsp oil in a shallow casserole dish. Add 2 chopped red onions and cook for 2 mins, then tip in 2 crushed garlic cloves, 2 chopped red peppers, 3 courgettes, and 1 aubergine. Cook for 10 mins, until the vegetables are soft.
Now, stir in a 400g can of chopped tomato and 4 tbsp water. Cover for 15 min. Meanwhile, tip 3 thinly sliced potatoes into a bowl. Then pour over the cream. Lay the potato slices on top of the ratatouille, creating a spiral pattern. Place in the oven, uncovered, for 40 minutes.
