Serve with a cup of tea at any time of the day as a sweet treat! This is what you will do: whisk 230ml of vegetable oil, 100g natural yogurt, 4 eggs, 1½ tsp vanilla, and ½ orange zest in a jug. Mix the flour, sugar, cinnamon, and nutmeg.

Add all wet ingredients to the dry. Incorporate the carrots, raisins, and half the nuts. Divide between 2 tins. Then, bake for 25-30 mins. For the icing, beat the butter and sugar together. Then, incorporate half the soft cheese and beat again, and add the rest.
